Blackberry Oaty Traybake Recipe

Ingredients

For the Oat Topping:

200g plain flour

150g rolled oats

100g granulated sugar

150g cold unsalted butter, cubed

For the Blackberry Filling:

400g fresh blackberries

50g granulated sugar (adjust to taste)

1 tbsp cornflour (cornstarch)

1 tbsp lemon juice (optional – but it really brightens the flavour)

Step-by-Step Instructions

1) Preheat & Prepare

Preheat oven to 180°C (160°C fan / Gas Mark 4).

Grease and line a 20 x 30 cm rectangular baking tin with parchment paper.

2) Mix the Oat Topping

In a bowl, combine flour, oats, and sugar.

Rub in the butter until the mixture resembles coarse crumbs.

3) Prepare the Blackberry Filling

Gently toss the blackberries with sugar, cornflour, and lemon juice.

4) Assemble

Press two-thirds of the oat mixture into the base of your tin.

Spread the blackberry filling evenly across the base.

Sprinkle the remaining oat mixture on top for that perfect golden crumble finish.

5) Bake & Enjoy

Bake for 35–40 minutes until golden brown and bubbling at the edges.

Allow to cool slightly before cutting into squares. Best enjoyed warm with cream, custard, or simply on its own.

Serving Suggestions

- Pair with a dollop of whipped cream or a scoop of vanilla ice cream.
